Hey there, Welcome to The Mofongo Chronicles! I am Jenn, I am so excited you’re here! I will share with you our journey of moving from the mainland U.S. to the beautiful island of Puerto Rico. Along with what our experience has been here on the island so far. I will also share fun things to do (kid-friendly activities mostly), raising chickens, places to eat and some of our favorite recipes.
And, oh yeah, Mofongo is one of my favorite Puerto Rican dishes….hence the name wink wink. For those not familiar with Puerto Rican cuisine – Mofongo is a classic and popular dish that consists of fried mashed plantains, yummy garlic and butter/olive oil mashed into it then molded into a ball and served with different proteins on top like skirt steak, saucy shrimp or chicken. There may be more variations but that might be all I can think of now because those are my favorite teehee… It seemed only right to name the blog after it.
